Tomato Soup

What do you do with your tomatoes are producing more than you can eat fresh, but not enough to make salsa? I like to make tomato soup! Here is my recipe, but if you have any improvements to it, or just want to post your recipe, by all means do! I love to try new and interesting recipes!

4 cups tomatoes chopped (you can peel them if you would like, but it tastes great with out too)
1/2 onion
4 whole cloves of garlic peeled
2 cups chicken or vegetable broth
2 table spoons cornstarch
3/4 cup cold water
1 teaspoon salt
dash pepper
2 teaspoon sugar
1 tablespoon fresh basil (optional)

In a pot combine tomatoes, onion, cloves and broth. Simmer over medium heat for about 20 minutes for the flavors to blend. You can also add the basil at this point.

Then remove from heat and blend up to get rid of all the chunks you can use a blender, or if you have a hand held one that can be submerged, that would work perfectly.

Pour back creamy mixture into the pot and mix the cornstarch and water together until there are no chunks. Bring mixture back to a boil and slowly stir in the cornstarch, using a whisk to mix well. Then season with salt, pepper, and sugar (and basil) adjusting your liking.

Makes about 6 cups or 6 servings, but we like to eat slightly more than one cup. It ends up being around 80 calories per cup. Makes a yummy low calorie side dish. Enjoy!!
